Colony Grill (CGS) was established in 1935 as a local bar and grill and bought by Eugene “Bo-Bo” Bohannon in 1961. Brothers Gary James and Jim Screws continue to run the business that has been a labor of love for them and their stepfather for many years.
Gary and Jim were thinking about expanding but hadn’t made any final decisions when they received a letter from Ken Martin that intrigued them. A group of friends wanted see if they could help them expand their concept. After several months of negotiations, an agreement was reached and the rest, as they say is “history”. The new Colony Grill Fairfield opened over Memorial Day weekend in 2010.
Ken Martin, Paul Coniglio, Cody Lee and NHL star Chris Drury – lifelong friends, all members of the Little League team that won the 1989 World Series reached a licensing agreement in 2010 with Colony to open the Colony Grill at 1520 Post Road in Fairfield. Not co-incidentally the telephone number in Fairfield is (203) 259-1989. When they got together for their 20th Little League Championship Reunion last year they talked about joining forces and opening a restaurant together.
“There was something special about these guys that made us comfortable and we were assured that they understand our passion for making consistently great pizza and providing an environment that welcomes people as friends,” said Gary James.
“We have been going to CGS and enjoying the great pizza for many years,” said Paul Coniglio. “We were sitting at Colony Grill in Stmfrd one night enjoying a beer and pizza and the thought came to us-‘if we are going to open a place together, this is the place we would want to open,’” interjected Cody Lee.
